Ingredients
- 4 salmon fillets (5 oz each)
- 1/3 cup soy sauce or tamari
- 3 tbsp honey
- 2 tbsp rice vinegar
- 1 tbsp grated ginger
- 2 cloves garlic, minced
- 1 tsp cornstarch
- 1.5 cups jasmine rice
- 4 cups broccoli florets
- 1 tbsp sesame seeds
Steps
- 1Whisk soy, honey, vinegar, ginger, garlic, and cornstarch. Simmer 2 minutes until glossy.
- 2Preheat oven to 400°F. Cook rice.
- 3Arrange salmon and broccoli on a lined sheet pan. Brush salmon with half the sauce.
- 4Roast 12–14 minutes until salmon flakes and broccoli is tender-crisp.
- 5Divide rice, broccoli, and salmon into containers. Drizzle remaining sauce, top with sesame seeds. Keeps 3 days.
