Ingredients

  • 4 salmon fillets (5 oz each)
  • 1/3 cup soy sauce or tamari
  • 3 tbsp honey
  • 2 tbsp rice vinegar
  • 1 tbsp grated ginger
  • 2 cloves garlic, minced
  • 1 tsp cornstarch
  • 1.5 cups jasmine rice
  • 4 cups broccoli florets
  • 1 tbsp sesame seeds

Steps

  1. 1Whisk soy, honey, vinegar, ginger, garlic, and cornstarch. Simmer 2 minutes until glossy.
  2. 2Preheat oven to 400°F. Cook rice.
  3. 3Arrange salmon and broccoli on a lined sheet pan. Brush salmon with half the sauce.
  4. 4Roast 12–14 minutes until salmon flakes and broccoli is tender-crisp.
  5. 5Divide rice, broccoli, and salmon into containers. Drizzle remaining sauce, top with sesame seeds. Keeps 3 days.
