Lemon Herb Pasta — Pantry magic, ready before the kettle cools, a weeknight recipe from Pamela Herrera's Sunshine Kitchen

Ingredients

  • 12 oz spaghetti or linguine
  • 3 tbsp olive oil
  • 3 garlic cloves, thinly sliced
  • Zest and juice of 1 lemon
  • 1/2 cup grated parmesan, plus more to serve
  • 1/4 cup chopped parsley
  • 2 tbsp chopped basil
  • Salt and freshly cracked pepper

Steps

  1. 1Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1 cup of pasta water before draining.
  2. 2While pasta cooks, warm olive oil in a wide skillet over medium-low heat. Add garlic and gently sizzle for 1–2 minutes until fragrant, not browned.
  3. 3Off the heat, stir in lemon zest and juice. Add the drained pasta with a splash of pasta water and toss to coat.
  4. 4Add parmesan and herbs, tossing again and loosening with more pasta water as needed until silky.
  5. 5Season with salt and pepper, and finish with extra parmesan on top.
