Taco Tuesday Beef Bowls — All the taco flavor, none of the shells-that-shatter drama, a kids · build-your-own recipe from Pamela Herrera's Sunshine Kitchen

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1/3 cup water
  • 2 cups cooked rice (cilantro-lime if you like)
  • 1 (15 oz) can black beans, warmed
  • 1 cup corn kernels
  • 1 cup diced tomato
  • 1 cup shredded cheddar
  • 1 avocado, sliced
  • Sour cream, salsa, cilantro to serve

Steps

  1. 1Warm oil in a skillet over medium-high heat. Add beef and cook, breaking up, until browned.
  2. 2Stir in taco seasoning and water; simmer 3–4 minutes until glossy.
  3. 3Divide rice among bowls. Top with beef, beans, corn, tomato, cheese, and avocado.
  4. 4Let everyone finish their own with sour cream, salsa, and cilantro.
