Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1/3 cup water
- 2 cups cooked rice (cilantro-lime if you like)
- 1 (15 oz) can black beans, warmed
- 1 cup corn kernels
- 1 cup diced tomato
- 1 cup shredded cheddar
- 1 avocado, sliced
- Sour cream, salsa, cilantro to serve
Steps
- 1Warm oil in a skillet over medium-high heat. Add beef and cook, breaking up, until browned.
- 2Stir in taco seasoning and water; simmer 3–4 minutes until glossy.
- 3Divide rice among bowls. Top with beef, beans, corn, tomato, cheese, and avocado.
- 4Let everyone finish their own with sour cream, salsa, and cilantro.
