Ingredients
- 2 tbsp olive oil
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 2 (28-oz) cans whole peeled tomatoes
- 2 cups vegetable broth
- 1/2 cup fresh basil leaves, plus more to serve
- 1/2 cup heavy cream or coconut milk (optional)
- Salt and pepper
Steps
- 1Warm olive oil in a heavy pot over medium heat. Add onion and a pinch of salt; cook 6–8 minutes until soft.
- 2Stir in garlic and cook 1 minute. Add tomatoes (with juices) and broth; bring to a simmer.
- 3Simmer uncovered for 15 minutes, breaking up tomatoes with a spoon.
- 4Add basil, then blend with an immersion blender until smooth. Stir in cream if using.
- 5Season to taste and serve with extra basil on top.
