Ingredients

  • 12 oz elbow macaroni
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 1/2 cups whole milk, warmed
  • 1 tsp salt
  • 1/4 tsp mustard powder
  • 8 oz sharp cheddar, freshly grated
  • 2 oz mozzarella, freshly grated
  • Chopped parsley to serve (optional)

Steps

  1. 1Cook macaroni in salted water until just al dente. Drain and set aside.
  2. 2In the same pot, melt butter over medium heat. Whisk in flour and cook 1 minute.
  3. 3Slowly whisk in warm milk. Cook, stirring, until thickened, 3–4 minutes.
  4. 4Off the heat, stir in salt, mustard powder, and cheeses until smooth.
  5. 5Fold in macaroni. Serve immediately, topped with parsley if using.
