Brown Butter Chocolate Chip Cookies — Crisp edges, soft middles, melty pockets, a bake recipe from Pamela Herrera's Sunshine Kitchen

Ingredients

  • 1 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp fine sea salt
  • 2 cups semisweet chocolate chips or chopped chocolate
  • Flaky salt, to finish

Steps

  1. 1Melt butter in a small saucepan over medium heat, swirling, until it smells nutty and turns deep amber, 5–7 minutes. Pour into a large bowl and cool 10 minutes.
  2. 2Whisk in brown sugar and granulated sugar until smooth. Add eggs and vanilla; whisk vigorously for 1 minute.
  3. 3Stir in flour, baking soda, and salt just until combined. Fold in chocolate. Chill dough 20 minutes.
  4. 4Heat oven to 375°F and line two sheet pans with parchment. Scoop 2-tbsp balls of dough about 2 inches apart.
  5. 5Bake 10–12 minutes until edges are golden and centers look set. Sprinkle with flaky salt and cool 5 minutes on the pan.
